Strawberry Shortcake Eclair Cake

Layers of strawberry pudding, graham crackers, and strawberry jam makes this Strawberry Shortcake Eclair Cake such a delicious no bake treat.  It is the perfect dessert to satisfy that sweet tooth when you are short on time.

I get to celebrate my birthday by sharing an easy cake recipe in a surprise baby shower for my good friend Lisa from Wine and Glue.  I had the opportunity to meet Lisa a few months ago at the Pillsbury holiday blogger event.  She is so sweet and fun to be around, and she makes the yummiest treats and dinners on her blog.

Since we are all spread over the country making a real baby shower impossible, a group of our blog friends decided to get together and surprise Lisa with a virtual shower.   Make sure you visit all the links at the bottom of the page for more yummy recipes perfect for sharing at any party! 

Ingredients

  • 1 small box instant Strawberry Creme Jello Pudding (3.4 ounce)
  • 1 1/2 cups milk
  • 1 cup Cool Whip + extra for garnish
  • graham crackers
  • 2 cups diced strawberries
  • 1/4 cups sugar

Instructions

  1. Whisk together the instant pudding and milk. Fold in 1 cup Cool Whip.
  2. Place a layer of graham cracker in the bottom of an 8x8 baking dish. Spread half the pudding on the crackers. Cover with another layer of crackers. Add the rest of the pudding over the middle layer of crackers. Top with one more row of crackers. You may need to break some into small pieces to cover all the pudding. Place in the refrigerator.
  3. Place the strawberries and sugar in a saucepan. Heat over medium heat until it comes to a boil. Lower the heat and simmer until it gets thick, about 5 minutes. Let cool. Spread over the top of the mixture in the pan. Keep refrigerated. Cut into 12 slices. Top with more Cool Whip and extra strawberries before serving.


Notes

*Use an instant vanilla pudding and a few spoonfuls of strawberry Jello gelatin powder in vanilla pudding. Stir to taste.
